Ingredients

  • 1 cup Fresh cilantro coriander leaves, washed and roughly chopped
  • ½ cup Grated fresh coconut or ¼ cup coconut cream
  • 2 large Green chilies adjust according to your heat preference
  • 1 inch Fresh ginger peeled, chopped
  • 1 med Garlic clove chopped
  • 2 inch Fresh tamarind soaked in 14 cup water or use 2 tbsp of lemon juice
  • ¼ tsp Salt or to taste
  • 1 tbsp Sugar optional – I prefer brown sugar
  • 1 – 2 tbsp Water if necessary for consistency

Instructions

Green chutney

  • Add all ingredients (except water) to a blender. Blend until smooth. Scrape the blender to ensure you have no lumps. Use the water if necessary. Blend again until the chutney is smooth and has a consistency of your liking.
    1 cup Fresh cilantro, ½ cup Grated fresh coconut, 2 large Green chilies, 1 inch Fresh ginger, 1 med Garlic clove, 2 inch Fresh tamarind soaked in 14 cup water, ¼ tsp Salt, 1 tbsp Sugar

Cilantro chutney

  • Reduce or omit the coconut from the above recipe. You can also add a handful of mint leaves for added flavor. Adjust the number of chilies and other ingredients as per your taste.

Mint chutney

  • Reduce the cilantro leaves by half and add 1 cup of fresh mint leaves. Follow the same procedure as the green chutney.
    Pro tip – You can also combine both mint and cilantro in equal proportions for a mint-cilantro chutney.

Coconut chutney

  • Reduce the cilantro leaves by half and increase the quantity of grated coconut to 1 1/2 cups. Add 1/2 cup of roasted chana dal (or dalia) for thickness. Follow the same procedure as the green chutney.
    Pro tip – You can season the coconut chutney with a tadka (tempering) of mustard seeds, urad dal, and curry leaves fried briefly in oil.

Store

  • Transfer the chutney to a serving bowl and refrigerate. Use within 1-2 days for best freshness.
