  • 2 lbs (1 kg) Fresh crab, cleaned and cracked
  • 2 tbsp Vegetable oil
  • 2 med Onions finely chopped
  • 4 – 6 large Garlic cloves minced
  • 1-inch piece Fresh ginger grated
  • 2 med Tomatoes chopped
  • 14 oz (400 ml) Coconut milk or 1 cup ground fresh coconut
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • ½ tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • ½ – 1 tsp Red chili powder adjust to taste
  • ½ tsp Garam masala
  • ½ tsp Salt to taste
  • ¼ cup Fresh cilantro leaves for garnish

Instructions

  • Clean and prepare the crabs: Rinse the crabs thoroughly under cold running water. Crack the crab shells and claws using a mallet or the back of a heavy knife. This will help the flavors penetrate the crab meat during cooking. Set the cleaned and cracked crabs aside.

  • Prepare the spice mixture: In a small bowl, combine the turmeric powder, coriander powder, red chili powder, and garam masala. Set this spice mixture aside.
    2 tbsp Vegetable oil, 2 med Onions, 4 – 6 large Garlic cloves, 1-inch piece Fresh ginger, 1 tsp Mustard seeds, 1 tsp Cumin seeds
  • Sauté: Heat the vegetable oil in a large, deep skillet or a heavy-bottomed pan over medium heat. Add the mustard and cumin seeds and let them splutter for a few seconds. Add the finely chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown, which should take 5-7 minutes.

  • Spices: Once the onions are nicely browned, add the spices and chopped tomatoes. Stir well to coat the vegetables evenly. Add a few tablespoons of water to prevent the spices from burning and cook for 3 – 5 minutes until the raw smell of the spices disappears.
    Pro tip – You can substitute the spices with 2 tbsp of East Indian Bottle Masala to make authentic East Indian Crab curry.
