Varias - East Indian Lentil Bread
Varias also know as Orias are often made during and East Indian wedding. These along with fugias are served as bread with all the wedding food. In fact, an East Indian wedding is incomplete with the presence of fugias and varias.

500 grams Urad dal flour split black gram 500 grams All-purpose flour maida 500 grams Rice flour 100 grams Sugar 2 tsp Yeast or toddy 1 tsp Salt 1 ltr Cooking oil for deep frying
Combine all ingredients in a bowl with warm water.
Let ferment overnight at room temperature
Heat oil for deep frying (about 325 F)
Take a small amount of dough on the palm of your hands with water
Form a ball then make a hole in the middle with your finger
Drop in hot oil and deep fry until golden brown.
Remove the varias with a proforated or slotted spoon over absorbend paper to remove excess oil.
Each varias takes about 2 minutes on each side.
